Most days, dinner prep is a rushed affair around our house happening in the 30 minutes between arrival and ruined appetites (if I exceed 30 minutes then the kids bombard the kitchen to eat snacks instead of dinner behind my back). I am usually rushing to prepare something healthy before they shove some snack food into their mouths before I notice.
The other night I discovered some leftover injera in the freezer and knew anything pizza is always a kid hit. Our household is also largely gluten free as my six year old and husband can’t eat gluten. So I made injera pizzas. They were instantly successfully and even faster than regular pizza!
You can pretty much see from the pics what I put on top–leftover tomato sauce (and even though I prefer homemade, we were all out so I used Trader Joe’s from a jar), feta cheese (goat cheese feta as my kids can’t eat cow milk either) and some kale that was soon going to turn bad soon so I used it up.
This will definitely be put into the meal in a pinch rotation as they loved it.
What a great idea! I am really curious about how this would taste, as the texture of injera is so different, but I bet it is great! I love injera 🙂 Thanks for sharing at the Culture Swapper!
